Jaggery or Gur in Hindi is basically the unrefined sugar that is obtained from raw, concentrated sugarcane juice. Although Gur can be made from other sources, such as date palm (Nolen Gur) and from the sap of coconut, the one made out of the sugarcane juice is the most commonly used. It is made by boiling sugar cane juice until it solidifies and then placed into blocks.
